His cuisine, full of flavours, a combination of his professional career in 3-star Michelin restaurants in France (Restaurant Au Crocodile in Strasbourg, Restaurant Oasis in La Napoule, Restaurant Alain Chapel in Mionnay) and 5 star Hotels in Asia (Mandarin Oriental, Le Meridien, Aman Resorts, Oberoi Hotel and The Datai, Langkawi), sets the benchmark for epicureans. In 1998, Jean-Marc served as Chef de Cuisine for Queen Elizabeth at the time of the Commonwealth Games in Malaysia.
